Smoked Chicken

Cook time is around 3 hours
Ingredients:
  1. Whole Chicken (cut in Half and flatten each half)
  2. Dried basil
  3. Salt and pepper
  4. Fresh garlic cloves
  5. Wood chips (soaked in water)
  6. Charcoal
Get your grill ready with your charcoal burning and don't use a lot of charcoal. We want to smoke it slowly.
Start off with cutting your chicken in half and press down each half with your palm to flatten.

Stick garlic cloves under skin of chicken. I only cooked half of the chicken in this demo.

Rub down chicken with Salt, pepper, basil.

Throw your soaked wood chips on grill. Close all your air vents on grill.

Put chicken on and close grill lid tight.

Let it smoke heavy and then when it starts to die down. Open the vents up just a little to keep the charcoal going slowly. We are aiming for about a 3 hour cook time.

Vegetable prep

Cook time is around 20 minutes on grill.
Ingredients:
  1. Carrots
  2. Garlic
  3. Onion
  4. Zucchini
  5. Green peppers
  6. Salt and pepper
  7. Olive oil
  8. Foil

Cut up vegetables and place in foil. Salt and pepper and drizzle with olive oil.
Fold foil tight so as vegetables will steam.

Chicken should be getting ready around 2 1/2 hours. Skin should be dark and leg real loose when you wiggle it. Throw your vegetable pack on your grill and should be ready in about 20 minutes. Let chicken rest for 5 minutes before cutting up.
