(Thick Bean Soup)

 



Ingredients:
  1. Avas beans (2lbs)
  2. Tomato 4
  3. Onion 1 small
  4. Garlic 3 cloves
  5. Chili pepper 1
  6. Toast 2 slices
  7. Achote (spice)
  8. Salt
  9. Pimento seeds
  10. Chicken flavor packet

Soak beans overnight and then peel off shell.
Cover beans with water and put on a slow simmer for 1 hour.
Add a little salt for flavor.




Place all vegetables in pan and brown on each side (slightly blackened).
Including chili.



Remove skin from tomatoes.

Beans should get very soft during cooking.

Puree vegetables in blender or smash by hand.

Add pimento spice to puree. Grind the seeds.

Add water to toast and smash.

Add smashed toast to puree.

Add 2 tablespoons of Achote (spice) to puree.

Finally add puree to beans and also add the chicken flavoring packet.


Should start to look like this.





When its finally thick to your liking. Serve with tamales.
