Olluquito sin carne (Peruvian Potato dish without meat.)

This is my unconventional twist on the recipe. Its vegetarian, but just add some meat if you like.
I have attempted to Americanize this recipe for people back home. Go here for the traditional dish.
This is an easy dish to make in Peru, since we have access to the ingredients. Now making olluquito in the USA or other western countries is tricky and we will have to get creative to make something similar.
The two key ingredients would be:
Olluco (similar to a small potato, but not technically a potato) and Aji Panca (red pepper sauce.)
This dish goes great with brown rice. So cook up a batch for your meal.
Ingredients:
- Potatoes (lets use some small red potatoes (replacement for Olluca) and Idaho Potatoes.
- Aji Panca (now you could use a nice dark red pepper chili sauce for a replacement? But I think you can find Aji Panca in the USA pretty easy.)
- Red onion
- Plum tomatoes
- Basil
- Garlic
- Sea salt and fresh ground black pepper
Cook the small red potatoes (or Olluco) separate and set aside. Don't over cook the red potatoes. We want a slight crunch. Slice thin. Evidently you can buy Olluco in a can. Check this site out. http://www.latinmerchant.com/productdetail.asp?ProductID=FV0061
This is what the Olluco looks like. But try using very small red potatoes instead.

Dice your red onion, garlic, basil and tomatoes.


Cut Idaho potatoes (or Peruvian potatoes) in half or thirds. That red bag is how the Aji Panca is bought in the markets of Peru, South America.

Add all ingredients into your pot (except the red potatoes). Place the red chili sauce (Aji Panca) on top. Stir and cover.


Once the Idaho potatoes can be pierced with a fork, add the red potatoes and remove your pan from the heat.

You’re done.
Dish out some rice and put the olluquito on top of the rice.

Well hopefully you get the idea and the taste of this Peruvian dish. Come to Peru for the real thing. Maybe you can find Olluco and some nice Peruvian potatoes in the USA for the real thing.
